Na kaj morate biti pozorni, ko kupujete kavo?

Ko pomislite na kavo, pomislite na njo kot živilo, ki se lahko pokvari in ne kot nekaj, kar lahko potisnete v kot shrambe in upate, da bo večno sveže.

Arome, ki dajejo te kompleksne okuse, oslabijo s časom in kava je postana in brez življenja. Postana kava vam seveda ne bo škodila ampak niti približno ne bo takšnega okusa kot sveža. Najboljša je 3 do 4 tedne po praženju, zato priporočamo, da je kupite toliko, koliko je boste spili v tem času.

Kava je lahko tudi preveč sveža. Prvih nekaj dni po praženju izloča precej plinov, med drugim ogljikov dioksid, kar ima lahko negativni učinek na okus. Zato imajo vrečke sveže pražene kave posebne, tako imenovane “aroma” ventilčke, ki omogočajo, da se ti plini izločijo, preprečujejo pa vdor kisika, ki bi lahko pokvaril sveže praženo kavo.

Kje kavo shranjevati? Največja sovražnika sta kisik in svetloba, torej shranite kavo na mestu, kamor ne seže svetloba in v neprodušno posodo, če je originalna embalaža takšna, da je ne morete popolnoma zapreti. Večina specialty kav je pakirana v vrečke s poebno zadrgo, s katero lahko vrečko kave skoraj popolnoma zaprete nazaj. Shranite jo v omari v kuhinji, nikar pa v hladilniku!

 

Kaj pa vse piše na vrečki “specialty” kave?

Če še niste nikoli kupovali kave, ki nosi naziv “specialty” kava, boste na vrečkah našli podatke, ki jih prej niste videli. Kaj in koliko podatkov je na vrečki, pa je odvisno od pražarja. Osnovni podatki, ki morajo biti na vrečki, so:

  • Izvor (ponavadi država in regija, kje raste ta kava)
  • Ime farme (včasih je to ime farme, pralne postaje ali kooperacije)
  • Sorta kaveVišina (kave, gojene na višjih nadmorskih višinah so ponavadi bolj kompleksne in vsebujejo več kislin)
  • Datum praženja (bodite pozorni, če ni naveden!)
  • Okušalne note (okusi, ki jih najdete v kavi, če je pravilno pripravljena) - o tem si preberite naš prejšnji zapis!

How to buy and store specialty coffee?

Coffee beans are not something that you could stick in the far corner of your cabinet and expect to be fresh as the day you bought it for the years to come! 

All the rich aromas pale with time and what is left is coffee that is boring and lacking any of the vibrancy it once had! It won’t hurt you but that is definitely not something you want to drink! Coffee beans are best 3 to 4 weeks after roasting, so we suggest you buy as many as you would dink in that amount of time!

Coffee can also be too fresh! First days after roast, beans release a lot of gas, mostly carbon dioxide, which can affect the flavor. This is why the coffee bags have an “aroma” valve! These valves let the carbon dioxide out, but won’t let the oxygen come in! How to store your coffee then? Oxygen and light are the enemies, so keep your beans in an airtight container if the original bag cannot be resealed properly and keep it away from sunlight. Your kitchen cabinet is just fine. Just don’t put it in the fridge!

What can you find printed on the label?

If you never bought specialty coffee before, you might find information on the label that you never seen before! What information is printed, depends on the roaster, but the basic information that must be included are:

  • Source (country and region)
  • Name of the farm (sometimes a washing station or cooperation)
  • Varietal
  • Altitude (higher altitudes result in more complex coffees with more acidity)
  • Roasting date (caution if not printed!)
  • Tasting notes (aromas that you find in coffee if prepared properly) - read on that in our previous post!
